IHOP-Style Pancakes for Dinner??

Last night was my first attempt EVER in making pancakes from scratch... you know without the box mix?? I always thought that was the 'from scratch' version since they came out with the pre-made frozen pancakes... :)

So, as I am trying to get our family into a healthier way of eating, I figured this would be a good thing! I got the recipe from recipezaar.com, and boy was it a HIT! I made a double batch for my family of 5, and they went like... well, hotcakes! My husband even said they tasted like IHOP pancakes (our favorite breakfast joint). This is going into the recipe book for sure.

Pancakes from Scratch (Click on the title for more reviews on these)
  • 1 egg
  • 1 cup buttermilk
  • 2 tablespoons oil
  • 1 cup flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
Blend all ingredients.
Brush griddle lightly with oil and heat.
Drop by 1/4 cup fulls onto hot griddle.
When the pancake bubbles, flip it over.
Cook the other side until lightly browned.

I made a double batch and highly recommend it as they're great to freeze in a freezer bag and eat for breakfast throughout the week. Just warm in the microwave in a papertowel.
