My recipe for the week is one that has gone into my "Family Cookbook" mentioned HERE. It's fairly simple, and a winner all around with my family.
Sweet 'n' Spicy Chicken
1 lb. boneless skinless chicken breasts, cut into 1/2-inch cubes
3 tablespoons taco seasoning
1 to 2 tablespoons vegetable oil
1 jar (11 ozs.) chunky salsa
1/2 cup peach preserves
Hot cooked rice
Place the chicken in a large resealable plastic bag; add taco seasoning and toss to coat. In a skillet, brown chicken in oil. Combine salsa and preserves; stir into skillet. Bring to a boil. Reduce heat; cover and simmer for 2-3 minutes or until meat juices run clear. Serve over rice.
Yield: 4 servings
*I often make a double batch to use up all the peach preserves in the jar and taco seasoning. Then, we just freeze it in a bag for another night's dinner.

This sounds really good. Have you ever tried adding a bag of frozen vegetables in with it? Thanks for the recipe!
My husband is not much of a vegetable eater, so I usually serve peas on the side or mix steamed peas in after I serve my husband's plate.
