These are a recent favorite of mine! They have a less sugary taste and are quite addictive.
Christmas Sandwich Cookies
Ingredients:
- 1 cup butter, softened
- 1/2 cup confectioners' sugar
- 2 tsp milk
- 2 cups all-purpose flour
- 1/2 cup cornstarch
- 1/8 tsp salt
- 5 Tbsp raspberry jam (or whatever flavor you like)
- In a mixing bowl, cream butter, confectioners' sugar and milk. Combine flour, cornstarch and salt; add to the creamed mixture, beating just until dough forms a ball.
- On a lightly floured surface, knead 20 times. Roll out to 3/8-inch thickness. Cut with a 2-inch round cookie cutter. Place 1 inch apart on ungreased baking sheets.
- Bake at 350 degrees for 12-13 minutes or until edges are lightly browned. Remove to wire racks to cool.
- Spread jam over the bottom of half of the cookies; top with remaining cookies.
- You may choose to frost the tops with a decorative look. I like them without frosting myself!
